One of many my News Years resolutions this year is to have breakfast. I’m sure I’m not the only one, but for some reason I find it hard to have breakfast each and every morning. The ‘normal’ is a venti sized sugar-filled Starbucks followed by a large brunch around 11am. But this year it’s time to stop most if not all of my bad habits and get well and truly into the breakfast routine, leading me to come up with new recipes making things too yummy to forget! These egg white bite do the trick so nicely I had to share with you all.

Total Time: 35 mintues

Calories: 58 each

Servings: 12


Cooking spray 

1 carton of (TWO CHICKS) 14 egg white

1/2 cup of low fat cottage cheese 

1/2 teaspoon of garlic powder 

Salt and pepper to taste 

1 cup of fresh spinach - finely chopped 

1/3 cup roasted red peppers drained and chopped 

1 tablespoon of fresh basil - finely chopped 

1/4 crumble feta cheese (optional) 

Preheat the oven to 350 F spray  a 12 cup muffin pan 

( Ness’s top tip - Try using a silicon muffin tray if possible, this insures easy removal) 


Combine egg whites, cottage cheese, garlic powder, salt and pepper in a blender, blend until smooth, around 15 secs 


Add the spinach, roasted red peppers and basil into a separate bowl. Pour in the egg mixture and stir to combine. Ladle the mixture evenly in to your muffin tray, filling each about 3/4 full. 

Top each muffin with feta cheese if you are using. 


Bake for 18-20mins
